The restaurant l'Oison has been in the hands of Gilles Gourvat since November 2003. His daily preoccupation is to bring out the very best in our regional products: "One of the richest gastronomic heritages, with regional products of an exceptional quality, with which I find pleasure working, in the respect of good taste."

Lo Chef

Gilles Gourvat is well known here. He developed his skills with a special admiration for the creativity of Michel Guerard (3 stars Michelin Guide, Eugénie les Bains), later with Jacques Cagnat (2 stars Michelin Guide, Paris). Then Gilles Gourvat became a "Chef".

But with the Chateau des Reynats, this young experimented chef (40 in 2003) found the establishment and the team which suit him. His knowledge of the region and his attraction for the local and noble products create a great combination with his creativity nourished with travels and flavours.
